Default I need to encrypt a folder; that's all!

Is there any software to do this simply? I have been using "PC
Encrypt" for a long time and now I find the original files it has
"erased" after encrypting can be read by the file rescue program
"Recover My Files". And probably by EnCase as well.

I have Windows7 Ultimate SP1

At the moment I use TrueCrypt with thumb drives, and I may have to
partition a drive on the C drive and store things on that.

Can BitLocker encrypt individual folders full of files?

Peter
