Hehe, OK who is holding up their hands to help out on this one. I have all the gear including some sat dishes.

First off we need to find a location. Preferably near/around Auckland as transporting this gear may be a bit of a pain.

I would have thought top of the bombays south would be the ideal

The best location i have found for a "long shot" like this is Raglan to Mt Taranaki, it is around the 130Km range, rua to tara is only about 100-110km's and the current long shot record is 115Km's I believe.
I would be keen to help if needed as well, drop me a line

Biggest problem with long shots is keeping within allowed EIRP limits.

You can start with a signal of some type and work to lower powered as you setup the gear better.
