I've had a Nokia 6500 classic phone I got via Vodafone running with an
Asda Mobile SIM in it for ages with no problem.
I had some trouble with the SIM so Asda Mobile sent me another and
transferred me over to the new SIM and ever since then I can no longer
see the Asda menu on my phone.
I emailed Asda mobile and all they suggested was that I could dial
*#1345# to get my balance. I'd like the Asda menu back because, as
well as giving easy access to the balance, it gives easy access to
topping up too.

The Asda menu?
I expect you mean the phonebook entries that were sent
to you via a service SMS when you installed the SIM
originally.
Just put them back manually
_CreditBalance *#1345#
_Helpline-ASDA 2732
_My Number *#100#
_Top Up 2732
_Voicemail 121
_VoicemailOFF 1210
_VoicemailON 1211

No, there was an Asda menu - you pressed Menu on the phone and one of
the items listed was Asda, if you went into that menu, among other
things there was an option to top-up and it involved entering various
things via menus and pressing ok each time in order to top-up without
having to make a call and listen to menus.
The Asda menu is now replaced by a Live menu which I guess refers to
Vodafone Live - my phone was orignally supplied by Vodafone (I know
Vodafone are the company one whose network Asda Moblile operates). I
can't work out why a simple swap of SIMs has caused this change

The network operator menu is provided by the SIM - some operators have one
and some don't. Since it's gone away I suspect they've changed something on
their SIM - they'd probably need to replace it to get the menu back. Can
you try your Asda SIM in another phone - say a basic one - and see if the
menu appears?
Can you run your phone without a SIM, and if so does the Live menu appear?
It may be they've changed something on the SIM which makes your phone think
it's on Vodafone, and then the Voda firmware on your phone brings up the
Live menu on top of Asda's found on the SIM. In which case, reflashing your
phone with the generic firmware would remove any confusion with the Vodafone
branding.

FWIW, I've never had an ASDA menu item with my ASDA sim, either in a
nokia 1001 which certainly supports this 'feature' (not that I know all
phones don't), or in a nokia 6120c. Had my sim since xmas. Perhaps it's
just new policy?
